1. Wash and chop carrots and potatoes, then microwave 6 min or until soft

2. In large stockpot, sautee carrots and potatoes in butter

3. Add 6 C milk, 2 C water and soup mix packet

4. Bring just to a boil, then simmer for 30 min or until potatoes and carrots are tender

5. Add more/ less water for desired thickness, and salt and pepper to taste

6. Serve with fresh chives, cheddar cheese, and warm bread

7. Makes about 8 servings; will keep in refrigerator for 1 week or freeze for up to 3 months.
